Welsh Leek And Potato Soup

Ingredients:
1 pound potatoes peeled
3/4 pound leeks
1 stalk celery
1 medium onion
1 pint milk
1 ounce butter
1-1/2 pints chicken stock
1 teaspoon salt
2 teaspoons freshly ground black pepper
1/4 pint light cream
2 egg yolks
Directions:
1. Slice potatoes.
2. Wash leeks well to remove all grit then slice.
3. Wash and chop celery then slice onion.
4. Melt butter in a large pan and add prepared vegetables stirring gently over heat for a few minutes.
5. Add stock and pepper and simmer for 1 hour.
