This is something I threw together last minute to take to a family brunch when I was notified that the only vegetarian dish on the menu was Mimosas. It ended up being a huge hit. At a former job, I made it once for a potluck and my coworkers ended up requesting that weirdo vegetarian salad for every subsequent potluck. You could easily adapt this to include whatever veggies you have on hand. Sometimes I add cauliflower if I've got some hanging around in the fridge. Preparation time includes the time to cook the quinoa, but not the time to cook dried beans as I almost always use canned. Ingredients:
2 cups cooked quinoa |
1 small cucumber, diced |
1 red bell pepper, diced |
1 pint cherry tomatoes, halved |
2 cups broccoli florets, steamed |
1/2 cup green peas |
1/2 cup carrot, shredded |
2 cups cannellini beans or 2 cups garbanzo beans, cooked |
1 (16 ounce) bottle italian dressing |
fresh basil, for garnish |
Directions:
1. Mix the quinoa, veggies, and beans together. 2. Add as much Italian dressing as you want. 3. Top with chiffonade of fresh basil. 4. Chill before serving. |
