Weight Watchers Squash and Tomato Saute |

The only change I made to this was omit the onions. Feel free to add them to the step when you saute squash. This is an easy and refreshing side dish. 1 serving=1 point Ingredients:
2 teaspoons olive oil |
1 zucchini (halved and sliced) |
1 yellow squash (halved and sliced) |
1/2 teaspoon salt |
1 garlic clove (minced) |
1 tomato (chopped) |
2 tablespoons fresh basil (chopped) |
1/4 teaspoon ground pepper |
2 tablespoons parmesan cheese (grated) |
Directions:
1. Heat oil in large skillet. Add zucchini, squash, salt and saute 5 minutes or when crisp tender. 2. Add garlic saute for 30 seconds, stirring constantly. 3. Add tomato and cook 1 minute until headed through. 4. Stir in basil and pepper. 5. Sprinkle with Parmesan. 6. Serve immediately. |
