From Weight Watchers Magazine Ingredients:
4 teaspoons light stick butter |
1 lb sweet onion, thinly sliced |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
1 cup reduced-sodium chicken broth |
1 cup grape tomatoes |
2 tablespoons red wine vinegar |
1/2 head chicory lettuce, torn into 1-inch pieces |
6 ounces baby spinach |
Directions:
1. Melt the butter in a large nonstick skillet over medium-high heat. Add the onions, salt, and pepper; cook, covered, stirring occasionally, until softened, about 8 minutes. Cook, uncovered, stirring frequently, until golden brown and caramelized, about 8 minutes longer. 2. Remove the skillet from heat; stir in the broth, tomatoes, and vinegar. 3. To make the salad, place the chicory in a large bowl. Add the onion mixture and toss to coat. Add the spinach; toss and serve at once. |
