Weight Watchers Spinach-Caramelized Onion Salad (1 Point)

Ingredients:
4 teaspoons light stick butter
1 lb sweet onion, thinly sliced
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup reduced-sodium chicken broth
1 cup grape tomatoes
2 tablespoons red wine vinegar
1/2 head chicory lettuce, torn into 1-inch pieces
6 ounces baby spinach
Directions:
1. Melt the butter in a large nonstick skillet over medium-high heat. Add the onions, salt, and pepper; cook, covered, stirring occasionally, until softened, about 8 minutes. Cook, uncovered, stirring frequently, until golden brown and caramelized, about 8 minutes longer.
2. Remove the skillet from heat; stir in the broth, tomatoes, and vinegar.
3. To make the salad, place the chicory in a large bowl. Add the onion mixture and toss to coat. Add the spinach; toss and serve at once.
