From WW Slow Good Cookbook! 1/4 cup =2 points If dip is too dry after mashing, stir in warm water, 2 tablespoons at a time, until it becomes thick and spreadable. Ingredients:
3 (15 1/2 ounce) cans cannellini beans |
1/2 cup water |
1/2 cup parmesan cheese, grated |
4 garlic cloves, thinly sliced |
2 tablespoons olive oil, extra virgin |
2 teaspoons dried sage |
1 teaspoon dried oregano |
1/4 teaspoon salt |
1/4 pepper, freshly ground |
3 tablespoons lemon juice, freshly squeezed |
1 teaspoon lemon zest |
Directions:
1. Place the beans,water, cheese, garlic, oil, sage, oregano, salt, and pepper in a 5 or 6 quart slow cooker, mix well. 2. Cover and cook until the cheese melts and the garlic is soft, 1-2 hours on high or 3-4 hours on low. 3. Add lemon juice and zest,coursely mash the bean mixture with a potato masher, stick wand or large wooden spoon until blended. |
