Quick and delicious Italian(ish) one pot meal. Add a salad, and you're good to go. Ingredients:
1 lb turkey breast, boneless, skinless cut into 1-inch pieces |
16 ounces canned kidney beans, drained and rinsed |
15 ounces canned tomato sauce |
29 ounces canned stewed tomatoes, italian-style |
4 ounces mushrooms, canned drained and sliced |
1 medium green pepper, chopped |
1 small onion, chopped |
2 celery ribs, chopped |
3 cloves, garlic, chopped |
1 cup water (may need to add more before adding pasta) |
1 tablespoon italian seasoning |
6 ounces whole-wheat spaghetti, uncooked, broken |
Directions:
1. Place all ingredients, except spaghetti, in a slow cooker. Cover and cook on low heat for 4 hours or until vegetables are tender. 2. Turn setting to high heat, stir in spaghetti and cover. Stir again after 10 minutes, cover and cook until pasta is tender, about 20 minutes more. Yields about 1 1/2 cups per serving. |
