Weeknight Stroganoff (Crockpot) |

Slightly adapted from my Crock Pot cookbook. Ingredients:
2 lbs beef stew meat, cut into 1-inch cubes |
2 cups sliced mushrooms |
2 (1 ounce) envelopes dry onion soup mix |
1 onion, sliced |
2 (10 ounce) cans cream of mushroom soup |
Directions:
1. Brown beef in frying pan (optional). Place all ingredients in the crockpot. Cook on low for 8-12 hours. For the last hour of cooking, turn the heat to high and remove the lid to thicken the sauce a bit. Serve over hot egg noodles. |
