Weeknight Stroganoff (Crockpot)

Slightly adapted from my Crock Pot cookbook.
Ingredients:
2 lbs beef stew meat, cut into 1-inch cubes
2 cups sliced mushrooms
2 (1 ounce) envelopes dry onion soup mix
1 onion, sliced
2 (10 ounce) cans cream of mushroom soup
Directions:
1. Brown beef in frying pan (optional). Place all ingredients in the crockpot. Cook on low for 8-12 hours. For the last hour of cooking, turn the heat to high and remove the lid to thicken the sauce a bit. Serve over hot egg noodles.
