This is our family recipe for Italian wedding soup and is always a great addition to warm meal in the winter. Ingredients:
1/2 lb. sweet italian sausage |
1/2 c. italian bread crumbs |
1 egg |
1/4 t. oregano |
1/4 t. dry parsley |
1 clove minced garlic |
dash of salt and pepper |
1 t. olive oil |
1/3 c. water |
2 c. cooked pastini |
2 quarts canned chicken broth |
1 chicken bouillon cube |
1/2 c. frozen spinach thawed, liquid squeezed out or 1 c. fresh spinach leaves, roughly chopped. |
Directions:
1. Meatballs: 2. Mix first 7 ingredients in bowl. 3. Form into bite-size meatballs. 4. Saute in olive oil over medium heat, until lightly browned. 5. Add water. 6. Reduce heat, cover and simmer for 3 minutes. 7. Drain. 8. Soup: 9. Place chicken broth, bouillon, cooked pastini, spinach and drained meatballs in large pot. 10. Bring to a boil. 11. Reduce heat and simmer 10 minutes. 12. Serve with crusty Italian bread. |
