Don't blame me if you become addicted to these mints! They're easy to make and a great end to a good meal. Enjoy! Ingredients:
4 oz cream cheese, softened |
3 1/2 cups confectioner's sugar |
1/8 - 1/4 t peppermint flavoring |
food coloring as desired (red, green, yellow) |
3/4 granulated sugar |
Directions:
1. Cream the cream cheese, confectioner's sugar and peppermint flavoring in a large bowl. Don't even think of using a mixer! 2. Divide into as many portions as you want colors. 3. Add one drop (but I always do more) of color to each portion and knead well. I keep my bowl of confectioner's sugar next to my kneading bowl and dip into it as needed to get a nice solid consistency and color. 4. Pinch off pieces and roll into 1/2 inch balls. I like to vary the size so there is a selection from small (for those who say they are dieting) to large. 5. Roll the balls in the granulated sugar and place on waxed paper or a silicone sheet (my preference). 6. Press down with a fork or flatten with the bottom of a glass. You could use molds if you have them for fancy shapes. 7. Chill. I place mine in the freezer for about 5-10 minutes then transfer to an airtight container. 8. Keep in the refrigerator but do not freeze. |
