Yummy bread that will have your family thinking their eating something bad for them while you smile & nod. Ingredients:
2 1/2 cups flour |
1/2 cup cocoa |
2 1/2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1 teaspoon salt |
1 teaspoon cinnamon |
3/4 cup vegetable oil |
2 cups sugar |
3 eggs |
2 teaspoons vanilla |
2 cups ground zucchini |
1 cup nuts (optional) |
1/2 cup milk |
Directions:
1. Combine dry ingredients. 2. Beat sugar & oil until blended. 3. Add eggs one at a time. 4. Stir in vanilla & zucchini. 5. Add dry ingredients alternately with milk. 6. Add nuts. 7. Pour all into greased & floured bread pans. 8. Bake at 350 degrees for 1 hour or until toothpick comes out clean. 9. Cool in pans 15 minutes then turn out onto wire racks. 10. When cool sprinkle the tops with powdered sugar, if desired. |
