We rarely have leftover watermelon but this recipe used up some less than desirable eat-out-of-hand pieces and scraps ends. It is cool refreshing and pretty. Ingredients:
4 cups fresh watermelon, chopped and drained |
1/4 cup red onion, diced small |
2 tablespoons honey |
1/4 cup of apple cider vinegar less one tbsp |
1 tbsp of balsalmic vinegar |
3/4 cup canola oil |
2 tablespoons fresh basil, chopped |
1 tablespoon fresh parsley, chopped |
1/4 tsp of sea salt |
1/2 tsp of fresh cracked black pepper |
Directions:
1. Combine watermelon, red onion, vinegars, canola oil, basil and parsley in a blender or food processor. 2. Pulse on and off about 30 seconds until combined. 3. Add salt and pepper. 4. Serve over boston or bibb lettuce greens, 5. Great additions to the salad greens would be watermelon balls and/or strawberry slices, sprinkled over all with crumbled feta. 6. There is something magical about balsamic vinegar and black pepper over watermelon or ripe strawberries. 7. This dressing makes a salad sing. |
