dressing: 1 tbsp. honey |
1 tbsp. water |
1 tbsp. balsamic vinegar |
1-1/2 tsp. olive oil |
1/8 tsp. dried tarragon |
1/2 tsp. lemon juice |
salt (to taste) |
salad: 4 cups romaine lettuce, thinly sliced |
4 cups spinach, washed and torn |
2 cups watermelon balls or cut into small squares. |
1/2 cup cucumber, sliced |
1 cup strawberries, sliced |
1/4 cup onion, thinly sliced seperated rings |
Directions:
1. In a bowl combine with a whisk; honey, vinegar, water, olive oil, tarragon, lemon juice,and salt. Set aside. 2. In a lrg. bowl combine, spinach, romaine lettuce, watermelon, strawberries, onion, and cucumbers. Drizzle dressing over salad, toss to coat and serve. |
