NO ice cream maker necessary!!! The mint and lemon add a nice touch to this simple and crowd-pleasing dessert. It's very inexpensive and make-ahead, so it would be perfect to serve at a BBQ! FYI. . .if you have a juicer, it will be that much easier! Prep time includes freezing time. Ingredients:
1 cup sugar |
1/2 cup corn syrup |
4 tablespoons lemon juice |
3 tablespoons grenadine |
3 fresh mint leaves |
1 (3 lb) seedless watermelon |
Directions:
1. In a small saucepan, bring sugar, syrup, lemon juice, grenadine and mint leaves to a boil dissolving the sugar granules. Let cool slightly. 2. Cut the rind off the watermelon and cut into chunks. 3. Puree half of the chopped watermelon in a blender. Strain through a fine mesh strainer into a large glass bowl. 4. Repeat with remaining watermelon. 5. Add slightly cooled syrup mixture to watermelon juice and mix well to incorporate. 6. Place sorbet into a 2-quart plastic container and freeze for 3 to 4 hours. |
