This recipe came from an estate sale. I obtained it when I purchased the family collection from the Campos Estate in Bonham, Texas in 1994.
Ingredients:
2 cups watermelon cubed and seeded
1/2 cup granulated sugar
1 envelope gelatin unflavored
1/3 cup cranberry juice cocktail
Directions:
1. Place watermelon in blender then cover and blend until smooth and stir in sugar.
2. In a small saucepan combine gelatin and cranberry juice then let stand 5 minutes.
3. Stir mixture over low heat until gelatin is dissolved.
4. Pour and stir gelatin mixture into the melon mixture then pour into square baking pan.
5. Cover and freeze until firm then break up frozen mixture and place in chilled mixer bowl.
6. Beat with an electric mixer on medium to high speed or until mixture is fluffy then return to pan.
7. Cover and freeze until firm.
