I came across this in a Colfax, WA cookbook and it is a BIG hit with my husband. Very light and refreshing, and something different. Look to this to use up some extra watermelon from your garden and to take to a function where your unique and refreshing recipe will shine! Read more ! Ingredients:
1c. walla walla, texas 1015 or vidalia onion, chopped |
2c. seedless watermelon, chopped |
1/4c. jalapeno, seeded and chopped very fine |
1c. orange sections, chopped |
1 lg garlic clove, minced |
1/4c. orange marmalade |
1/4c. fresh cilantro, chopped |
1/2 tsp. salt |
2 tbs. vinegar (i use apple cider vinegar) |
Directions:
1. In a small bowl, stir together the marmalade, cilantro, vinegar and salt until well mixed. In a large bowl, add rest of ingredients, gently toss. Add marmalade mixture to the large bowl, toss gently and chill at least an hour before serving. I used tortilla chips to dip but could be good with chicken or use your imagination! |
