Watermelon Salad With Rum And Mint |

This cool and refreshing fruit salad is a great compliment to any summer meal. Ingredients:
1/2 t finely grated lime zest plus 2 t lime juice |
2 t light-brown sugar |
2 t light rum |
1/4 t salt |
5-6 lb. seedless watermelon |
2 t fresh mint leaves (chiffonade) |
Directions:
1. In a large bowl, whisk together lime juice, sugar, rum and salt 2. Using a melon baller, scoop mellon into balls (will yield about 10 cups), or cut melon into bite size pieces. 3. Add melon to lime mixture in bowl. 4. Sprinkle with mint and lime zest, and toss to combine flavors. |
