I hate watermelons but my family loves it! So I do look for recipes that I think they will enjoy. This watermelon Salad is one of them. Ingredients:
1 small seedless watermelon |
honeydew melon, cantaloupe, pineapples pieces for a total of 8 cups |
1/2 cup sugar |
1/4 cup water |
1 tsp. grated fresh ginger |
1/2 tsp. vanilla |
Directions:
1. Hollow out 1 small, seedless watermelon and cut flesh into 10inch rounds with a small cookie cutter. 2. Add additional melon rounds, cantaloupes, honeydew and pineapple for a total of 8 cups.Place in a large serving bowl and set aside. 3. In a small saucepan, heat 1/2 cup sugar and 1/4 cup water over medium heat until sugar dissolves, about 5 minutes. Remove from heat, add 1 tsp. grated fresh ginger and 1/2 tsp. vanilla extract. 4. Cool, pour over melon you set aside. 5. Refrigerate, spoon into melon rind 6. You can garnish with grapes, strawberries, blueberries nuts, if desired. |
