I first heard of watermelon salad from a friend who spent some time in Australia. Watermelon salads were very popular there at the time and just about unknown here. Later, I found this very simple, but very yummy recipe and tried ir for myself. I hope you'll try it for yourself, too, if you already haven't. This salad is very refreshing ; the sweetness of the watermelon is offset by the tanginess of the arugula and the goat cheese. Ingredients:
1 (4 ounce) bag arugula, stems removed, roughlly torn |
2 cups watermelon, cubed |
1 (3 ounce) package feta cheese, crumbled |
2 tablespoons olive oil |
Directions:
1. Combine arugula, watermelon and feta in a large bowl. 2. Gently mix in olive oil and season with black pepper to taste. |
