2 tablespoons rice vinegar |
2 1/2 teaspoons sugar |
2 cups watermelon, diced and seeded |
2 cups cucumbers, diced |
1/2 cup cilantro, chopped |
1/4 cup dry-roasted unsalted peanuts |
Directions:
1. In a salad bowl combine vinegar and sugar and stir until sugar dissolves. 2. Add watermelon, cucumber and cilantro and toss. 3. Top with peanuts and toss again. |
