WATERMELON MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ludwig Estate in Temple Texas in 1984.
Ingredients:
1-1/2 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1/8 teaspoon salt
1/8 teaspoon cinnamon
6 tablespoons butter at room temperature
2/3 cup granulated sugar
2 eggs
1/2 cup milk
1/2 cup watermelon juice
1/2 cup watermelon pulp
1/2 cup raisins
Directions:
1. Sift flour, baking powder, baking soda, salt and cinnamon in large bowl.
2. Cream butter and sugar then add eggs and whip in milk, juice, pulp and raisins.
3. Add wet mixture to dry ingredients then blend just to incorporate.
4. Fill greased muffin cups 2/3 full then bake 25 minutes and transfer to wire rack to cool.
