Watermelon Ice Pops

These are too much fun! Absolutely too much fun! Grab a kiddo and get started. Takes a good deal of time, but the product is just too cute for words!
Ingredients:
1/2 small seedless watermelon
1/2 cup sugar
1/4 cup mini chocolate chips
1 pint lime sherbet, softened
12 3-ounce disposable cups
12 popsicle sticks
Directions:
1. MAKE WATERMELON ICE:
2. Scoop out and measure 5 cups watermelom pulp.
3. Puree pulp and sugar in batches in blender OR processor until smooth.
4. Push puree through mesh strainer into medium bowl.
5. Cover and freeze until puree is slightly slushy but not yet solid, 2 to 3 hours.
6. Remove from freezer abd stir well, scraping sides of bowl.
7. Stir in chocolate chips.
8. FREEZE POPS:
9. Place twelve 3-ounce disposable cups in shallow baking pan.
10. Spoon watermelon puree into cups to within 1/2 of cup rims.
11. Place pan in freezer until puree is solid but not rock hard, 1 to 2 hours.
12. ADD RIND :
13. Spread softened sherbet on top of puree to reach edge of cup.
14. Smooth with the back of a spoon.
15. Cover each cup with plastic wrap.
16. Cut small slit in center of plastic wrap.
17. Insert popsicle stick into pops so that it almost reaches bottomof cups.
18. Freeze until solid, at least 5 hours and up to 48 hours.
19. UNMOLD:
20. Let pops sit at room temperature for 1 minute.
21. Gently pull pops from cups.
22. **Alternately, paper cups may be peeled from pops.
23. Serve.
