This is a recipe that was suggested to go with Teriyaki Flank Steak (one of my recipes.) I have yet to try it but will do so when I can! You can use your own watermelon chunks, but just make sure you have the right amount (I believe it would be 2 cups.) Be careful with how much olive oil as some may not like the taste. Ingredients:
16 ounces watermelon, chunks cut into 1-inch cubes |
1 teaspoon coarse sea salt |
1/2 cup crumbled feta cheese |
3 teaspoons extra virgin olive oil |
Directions:
1. Cut watermelon into 1-inch chunks if not already done. 2. Divide watermelon between 4 salad plates. 3. Sprinkle watermelon with salt and feta cheese and drizzle with olive oil to serve. 4. Note: You can prepare this in a large bowl and have guests serve themselves. |
