Watermelon Basil Vinaigrette |

I received this in an email and it sounded wonderful. I am always on the lookout for different dressings. This one comes from the Fresh From Florida Cookbook. I haven't tried it yet but plan to in the near future. Ingredients:
4 cups fresh watermelon, chopped and drained |
1/4 cup red onion, diced small |
2 tablespoons honey |
1/4 cup champagne vinegar |
3/4 cup canola oil |
2 tablespoons fresh basil, chopped |
1 tablespoon fresh parsley, chopped |
salt and pepper |
Directions:
1. Add all ingredients to blender jar, cover and blend for until thoroughly blended. 2. Serve over your favoriate salad. |
