I saw this recipe in a magazine at a Dr.'s office. Unlike other people...you know who you are, I did not cut the recipe out of their magazine, and was left to remember it as best I could. The concept is to cut out the water used to boil the potatoes, which waters it down, hence, a more concentrated flavor. Read more .So far so good. Tweak it to your liking. It is very quick, easy and versatile. Ingredients:
-yukon potatoes, depends on servings needed, no need to peel |
-butter, as needed |
-cream, or milk, as needed |
-s&p, i use crazy jane's salt and ground pepper |
Directions:
1. -Cut Potatoes into quarters, place in a mic. safe, covered dish. Paper plates/bowls work too. No clean up. 2. -Nuke till fork tender..10-15 min, depending on the microwave. Same test used for boiling. 3. -Using a hand held masher, smash potatoes, while adding butter, cream/milk and S&P, until you get your desired consistency. 4. -Enjoy. |
