I've lost the source for this lovely recipe, but it's a great use for otherwise stale rolls. It can also be served as a main course, and in that case, serves 3. Ingredients:
3 whole whole wheat rolls, halved, remove crumb |
2 ounces butter |
4 ounces mushrooms, rough chopped |
4 ounces spinach, cooked, rough chopped |
2 ounces raisins |
salt |
pepper |
cinnamon to taste |
cloves to taste |
1 large egg |
Directions:
1. Put the halved rolls in a moderately hot oven for approximately 10 minutes, or until they are lightly brown and crisp. 2. Melt the butter in a pan and cook the mushrooms for a couple of minutes. 3. Add spinach and raisins to the pan, and continue to cook gently for several minutes, or until the butter has been almost absorbed by the veggies. 4. Season to taste with the salt, pepper and spices. 5. Beat the egg in a bowl, add to the veggie mixture and cook it gently just long enough for the egg to slightly bind the other ingredients. 6. Pile the filling onto the halved rolls and serve at once. |
