I found this recipe on an Old Time recipe site. It had zillions of old recipes, some as old as the 1800's. This sounded good and I made it. Very simple (it only has 5 ingredients) and still has the great taste of lemon ppie that everybody loves. I hate to see these old time recipes disappear!!! Cooking time does not reflect time for baking pie shell ahead of time. Ingredients:
1 lemon, juice, and grated rind |
water equal to the amount of juice from the lemon |
25 large marshmallows, cut in half |
3 egg yolks, beaten |
3 egg whites, beaten |
1 pinch salt |
baked pie shell |
Directions:
1. Juice 1 lemon and grate the rind. 2. add as much water as there is juice. 3. Put in double boiler and add marshmallows. 4. When thoroughly melted, add beaten yolks and cook until thick. 5. Add beaten whites. Stir well. 6. Cool slightly. 7. Pour into baked Pie shell. 8. Serve with whipped cream topping. |
