WARTIME GINGERBREAD This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982. “My New England great-grandmother’s recipe for gingerbread is a treasure in these days of shortages. Read more . No sugar, no eggs, no milk, very little shortening. It’s quick and easy.
Ingredients:
1 cup molasses
2 cups flour
2 teaspoons baking soda
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons butter
very hot water
Directions:
1. Mix molasses and flour.
2. Put soda, ginger, cinnamon, salt and butter in measuring cup and fill with very hot water.
3. Add to flour mixture gradually.
4. Bake very slowly at 300 in a loaf pan.
