Warm Tortelloni & Chicken Salad |

An easy weeknight meal using fresh and simple ingredients. Ingredients:
6 slices bacon |
4 chicken breasts, cut into small pieces |
1/4 cup balsamic vinegar (or italian dressing with additional optional for topping when finished) |
4 cups spinach |
2 cups tortellini, any flavor, cooked |
1 teaspoon salt (or season to taste) |
1 teaspoon ground pepper (or season to taste) |
Directions:
1. Cook tortelloni according to package directions, drain and set aside. 2. Cut bacon into small pieces and cook in a large skillet over med high heat until almost done. 3. Add chicken breast. Cook until chicken is no longer pink in the middle, approx 5 minutes. 4. Drain most of the bacon drippings. 5. Add the Balsamic Vinegar/Italian Dressing and the Spinach, cooking over med heat for approx 5 minutes, turning frequently to wilt the spinach. 6. Add the tortelloni and stir to coat. Season with Salt and Pepper as desired. Great served with a crusty bread. |
