Warm Tomato And Feta Bruschetta |

Delicious appetizer that's great for any occasion and it's easy to make with simple ingredients like italian dressing, tomatoes and onions and crumbled feta. Ingredients:
1 8 oz. loaf of sour dough or french bread (baguette) |
1/3 cup italian dressing |
1 lb plum tomatoes, seeded and chopped |
1/4 cup chopped red onion |
1/2 tbsp minced garlic |
1 4 oz pkg crumbled feta cheese |
3/4 cup fresh shredded parmesan cheese |
Directions:
1. Preheat oven to 375. 2. Cut bread into 1/2 inch thick slices. Brush one side of each slice with Italian dressing. Place in preheated oven until lightly toasted (about 5 minutes). 3. Meanwhile in a medium bowl combine tomatoes, onion, garlic and feta and remaining Italian dressing. 4. Spoon mixture onto each toast slice and sprinkle with shredded parmesan. 5. Return to oven for 7-10 minutes or until toppings are heated through. Serve immediately. 6. **You can increase or decrease the amount of Italian dressing added to the tomato mixture according to your tastes. I have also found that the basil and sun dried tomato flavored feta works extremely well in this recipe.** |
