An easy appetizer that is terrific for cocktails or 5 course meals. Ingredients:
warm stuffed dates |
makes 36 pieces |
18 medjool dates |
3 oz. mascarpone cheese |
3 oz. goat cheese |
36 whole almonds, lightly toasted |
3 oz. dry coppa |
Directions:
1. Preheat oven to 325*F 2. Halve the dates and discard the pits. 3. In a small bowl, mix together the Mascarpone and goat cheese until smooth. 4. Pipe a small dollop of cheese mixture in each date half. 5. Top with a whole almond. 6. Wrap in a half slice of coppa. 7. Secure with a toothpick, place on a ovenproof tray. 8. Heat dates until just warmed through. About 5-10 minutes. |
