Warm Stir-Fried Chicken & Spinach Salad  |

                    This salad makes a great lunch! Its easy to make & is full of flavor!! Ingredients: 
                    
                        
                                                9 ounces chicken breasts, cut into strips  |  
                                                3 tablespoons white wine vinegar  |  
                                                1 tablespoon olive oil  |  
                                                2 teaspoons dijon mustard  |  
                                                1/2 teaspoon sugar  |  
                                                1/4 teaspoon salt  |  
                                                1/8 teaspoon paprika  |  
                                                1/8 teaspoon pepper  |  
                                                4 cups fresh spinach, torn  |  
                                                10 cherry tomatoes  |  
                                                1/2 cup shredded carrot  |  
                                                1/2 cup jicama or 1/2 cup water chestnut  |  
                                                1/4 cup radish, sliced  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Whisk together; vinegar, oil, mustard, sugar, salt, paprika, & pepper. Pour into a zip lock bag, add chicken, & marinate for 2-5 hours. In a large bowl combine rest of ingredients. Drain chicken & stir fry till done. Add remaining marinade & heat till boiling. Pour hot chicken mix over salad, toss, & serve immediately.                              |
