Nice warm spinach salad with the addition of tomatoes and pecans. Ingredients:
1/2c pecan halves |
6 slices bacon,cut in 1 pieces |
1 red onion,halved and thinly sliced |
1 pint(2cups1/3c white wine vinegar |
1tbs. sugar |
2-3 bunches(11/2lbs total) flat-leaf spinach,trimmed,cleaned and dried |
coarse salt and pepper |
Directions:
1. Preheat oven to350. Spread pecans on a rimmed baking sheet,and toast in oven until golden and fragrant,10-15 mins. Set aside 2. Meanwhile in a large skillet over medium heat,cook bacon,stirring occasionally,until browned and crisp,6-8 mins. Transfer to paper towel lined plate. Pour off all but 3 Tbs. fat from skillet. 3. Add onion to the skillet,cook,stirring occasionally till crisp tender,5-7 mins. Add tomatoes,vinegar and sugar;simmer until liquid thickens slightly and tomatoes are heatesd through,1-2 mins. 4. Place spinach in a large bowl,and pour hop tomato-onion mixture over; toss quickly to coat and wilt spinach. Season with salt and pepper. Sprinkle with reserved pecans and bacon. |
