1 lb new or baby purple potatoes, unpeeled |
1 tbs minced red or white onion |
1 tbs minced fresh parsley |
mayonaisse to bind |
salt and fresh grated black pepper to taste |
Directions:
1. Cooki potatoes tender 2. Keep skin on 3. When warm enough to handle, cube or chop for potato salad 4. Stir in the onion, parsley and enough mayonaisse to desired consistency 5. Season to taste 6. Serve warm or chilled 7. Multiply recipe for larger qauntities |
