If you like dill and capers this is the potato salad for you. This is one of my 3 favorite potato salads and one I serve often. I'm always ased to bring it to potlucks. Tried and true.
Ingredients:
1 pound new potatoes skin on
4 tablespoons dill butter
1 tablespoon chopped capers
1 tablespoon chopped shallots
boil potatoes in salted water until tender then peel and mash lightly with a fork. toss with dill butter, capers and shallots. serve warm.
dill butter
2 tablespoons dry white wine
8 tablespoons unsalted butter at room temperature
1 tablespoon fresh dill chopped
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Bring wine to a boil in a heavy saucepan watching constantly. 2. Reduce heat to low and add 2 tablespoons butter. 3. Immediately start whisking and continue to whisk until butter has blended smoothly into liquid. 4. Add remaining butter in 2 tablespoon pieces whisking constantly after each addition until smooth. 5. Do not let mixture boil. 6. Remove from heat. 7. Add chopped dill, salt and pepper.
