This is a very tasty and very filling salad that is great all year long. I first tasted this at a baby shower and knew I had to have the recipe. I make this often for my lunch and office potlucks. Everyone loves it. Read more . Hope you do as well. Ingredients:
8 small new potatoes scrubbed |
3 spring onions trimmed and finely chopped |
1 tablespoon chopped fresh parsley |
1 teaspoon lemon juice |
2 teaspoon tarragon or cider vinegar |
1 teaspoon olive oil |
1 can tuna chunks in oil drained |
1 teaspoon sea salt |
1 teaspoon freshly ground black pepper |
lemon wedges to garnish. |
Directions:
1. Cook potatoes in lightly salted water for 15 minutes. 2. Mix together onions, most of the parsley, lemon juice, vinegar and olive oil. 3. Drain potatoes and place in a serving bowl then add dressing and toss well. 4. Gently mix in the tuna being careful to avoid breaking it up too much. 5. Season with salt and pepper then sprinkle with remaining parsley. 6. Garnish with lemon wedges and serve while warm. |
