Warm Potato and Avocado Salad |

Looking for an avocado recipe? This is a good one. Vegetarians, leave the bacon out or substitute with a fake bacon. Ingredients:
2 ripe avocados, diced |
4 -5 small potatoes |
2 slices bacon |
10 -12 cherry tomatoes |
1 dash lime juice |
1 dash extra virgin olive oil |
2 teaspoons capers |
1 teaspoon honey |
ground black pepper |
1/4 cup fresh coriander |
salad greens |
Directions:
1. Cook potatoes until tender and quarter them. 2. Grill bacon then chop into small pieces. 3. Add everything to a pan and cook lightly for three minutes. 4. Toss and serve on salad leaves. |
