This recipe goes with Pork Chops with Warm Pineapple Salsa Ingredients:
2 shallots, finely chopped |
1 jalapeño pepper, minced |
1 1/2 teaspoons grated fresh ginger |
vegetable cooking spray |
1 1/4 cups fresh orange juice |
1 pineapple, peeled and chopped |
1 tablespoon chopped fresh mint |
1 tablespoon chopped fresh basil |
1/2 teaspoon curry powder |
Directions:
1. Sauté first 3 ingredients in a skillet coated with cooking spray over high heat 2 minutes. Add juice, and cook 5 minutes or until mixture is reduced by half. Stir in pineapple and remaining ingredients; reduce heat to low, and cook until thoroughly heated. |
