A delicious apple topping over a light cake batter makes a great comfort dessert .this is so yummy....a must try........................ courtesy comfort foods............. Ingredients:
4- cups macintosh apples peeled and sliced |
2/3- cup( 150 ml) maple syrup |
1/3- cup(75ml) raisins |
1- cup (250 ml) all-purpose flour |
1/4- cup( 50 ml) granulated sugar |
1 1/2- teaspoon( 7 ml) baking powder |
1/2- teaspoon ( 2 ml) baking soda |
1/4- teaspoon ( 1 ml) salt |
1/4- cup ( 50 ml) butter cut into pieces |
1- egg |
1/2- cup ( 125 ml) buttermilk |
1- teaspoon ( 5 ml) vanilla extract |
slivered almonds or pecans pieces to add on top |
Directions:
1. Preheat oven to 350 degrees f. grease an 8 inch square baking dish.................... 2. in a saucepan , bring apples and maple syrup to a boil; simmer 3 minutes or until softened................... 3. add raisins....... 4. pour into prepared baking dish................ 5. in a bowl , combine flour, sugar, baking powder, baking soda and salt 6. cut in butter using a pastry blender or 2 kniives to make fine crumbs.. 7. in a bowl beat egg, buttermilk, and vanilla............ 8. pour over flour mixture; stir just until combined.............. 9. drop by large spoonfuls onto warm apple slices 10. bake in preheated oven for 30 minutes or until top is golden and cake is tested by toothpick inserted in center comes out clean 11. serve warm with ice cream............... add nuts on top is desired 12. serves 6-8 depending on portions ................ |
