this makes almost a meal out of 1/4 of an iceberg lettuce. i've had it once, about 45 years ago, in indiana and still like it. Ingredients:
1 iceberg lettuce |
12 strips of bacon - or more |
vinegar, about 1/4 cup |
sugar, about 1 teaspon |
pepper, about 5 turns of the pepper mill |
salt (a pinch) |
chili flakes, if desired, a pinch |
water, about 1/2 cup |
about 2 tbsp oil, if bacon does not have enough fat |
or if you'd rather not eat the bacon fat and |
use vegetable oil instead |
Directions:
1. cut lettuce in quarters 2. remove chunky bottom parts 3. fry bacon in skillet 4. remove bacon to paper towel 5. dispose of some of bacon fat i fdesired 6. add vinegar and water, 7. stiring all the time, scraping pan 8. add sugar, pepper, chili flakes, 9. a pinch of salt, if required 10. crumble bacon into bits, 11. put back into skillet 12. stir 13. ladle hot dressing on lettuce 14. serve immediately |
