Warm Green Bean Salad with Pine Nuts and Basil |

I got this recipe from an Italian friend's visiting mother. It goes great with grilled chicken. Ingredients:
1 1/2 lbs slender green beans, trimmed |
2 tablespoons olive oil |
1/4 cup pine nuts (about 1 1/2 ounces) |
2 cloves garlic, minced |
18 large fresh basil leaves, chopped |
Directions:
1. Cook beans in large pot of boiling salted water until crisp-tender, about 5 minutes. 2. Drain. 3. Place beans in bowl of ice water to cool. 4. Drain well. 5. Pat dry with paper towels. 6. Heat oil in heavy large skillet over medium-low heat. 7. Add pine nuts and sauté until light brown, about 6 minutes. 8. Add garlic; stir 1 minute. 9. Add green beans to skillet; sauté until heated through, about 5 minutes. 10. Stir in basil. 11. Season with salt and pepper. 12. Transfer to bowl and serve. |
