Warm Green Bean Potato Salad With Bacon |

My bacon-y twist on the e on, EVERYTHING is better with bacon! In fact, it is kind of a lighter, fresher version of German potato salad. The hubby loved it! Ingredients:
6 medium red potatoes, cooked in jackets |
1/4 green pepper, diced |
1/4 small red onion, diced |
2 cloves garlic, finely minced |
1 pound green beans, ends snapped off, broken in half, cooked tender crisp |
4 slices bacon, cooked, drippings reserved |
2 tablespoons stoneground mustard |
2 tablespoons olive oil |
2 tablespoons red wine vinegar |
1 lemon, a large juicy one, juiced |
2 tablespoons sugar |
salt and pepper, to taste |
Directions:
1. Peel and dice potatoes and place in large bowl. Add the rest of the veggies. 2. Combine all the dressing ingredients along with the bacon drippings, mix well, pour over potatoes and veggies. 3. Chop bacon coarsely and sprinkle over salad. 4. Taste, add salt and pepper to taste. 5. Serve at room temperature. |
