Warm Gfcf Pineapple and Pumpkin Cereal |

A variation on Super Porridge for the holidays! Ingredients:
2/3 cup brown rice |
1/3 cup lentils |
1 (20 ounce) can pineapple slices (in juice) |
1 (15 ounce) can pumpkin |
4 tablespoons dark brown sugar |
1 teaspoon ginger powder |
Directions:
1. In a blender, grind the grains and beans on high for 2 minutes. 2. Pour the powder into a heavy-bottomed pot. 3. Crack open the pineapple can and drain out the juice into a pyrex measuring cup. 4. Add enough water to the juice to make 4 cups liquid, then add to the pot and mix thoroughly. 5. Rinse out the blender, and blend the pineapple slices themselves until completely smooth, add to the pot. 6. Add the sugar and ginger to the pot, mix. 7. Put the pot over high heat until it begins to boil, then lower heat and simmer, stirring constantly, for 10 minutes. 8. Add pureed pumpkin, mixing thoroughly. 9. Serve immediately, or refrigerate for later. |
