Warm German Potato Salad With Bacon |

Easy German style potato salad that goes great with brats. Ingredients:
8 large yukon gold potatoes |
1/2 cup onion, diced |
1/2 cup bacon, diced |
1/4 cup white vinegar |
1/4 cup broth |
fresh parsley |
salt |
pepper |
Directions:
1. Cook potatoes in their jackets until firm yet done. 2. Remove peel and cut into bite size pieces and set aside in a bowl. 3. Fry bacon golden brown. 4. Add onions and fry both until onions turn transparent but not dark. 5. Remove from heat and ad vinegar and broth. 6. Bring to a quick boil. 7. Pour over potatoes and season with salt and pepper. 8. Mince some fresh parsley and mix under the saldad. |
