An easy fall-winter lunch for when you need something warming and light at the same time. Ingredients:
1 1/2 tbsp patak's tandoori paste |
1 tsp garlic powder |
1/2 tsp onion powder |
2 tbsp water |
150 g eggplant, unpeeled and chopped |
55 g sliced mushrooms |
55 g sliced zucchini |
Directions:
1. Pre-heat oven to 375ºF. 2. Combine paste, garlic and onion powders, and water, set aside. 3. Combine vegetables in a small roasting pan, cook 20-30 minutes. 4. Toss with thinned paste mixture. 5. Serve over a bed of lettuce (or pasta for a heartier meal). |
