Warm Creamy Potato Salad

A wonderful warm vegetarian potato sald. No mayo here ! The secret is to mix when warm. it makes a big difference in taste and texture.
Ingredients:
6 red or gold or other waxy potatoes
1 small sweet onion minced
1/2 cup to 1 cup extra virgin olive oil or as needed
salt and fresh grated black pepper
chopped parsley if desired
Directions:
1. Made vegetarian for my relatives but a nice variation is adding some chopped cooked turkey bacon.
2. Cook potatoes by favorite method.
3. Peel when warm enough to handle.
4. Slice or cube while warm.
5. Stir in onion and parsley and add enough olive oil until salad is creamy and moist.
6. Season liberally with salt and pepper.
7. Garnish with a sprinkling of paprika or chopped tomatoes etc. if desired..
8. Serve warm or at room temperature.
