Warm, spiced apple cider gets a tart kick with the addition of cranberry and lime juices. This is great with a nip of rum or brandy, but is also delicious as a virgin version, as well. Ingredients:
3 cups apple cider |
1/2 can frozen cranberry juice concentrate, thawed |
juice from 1 lime |
1t vanilla or rum extract or 3 shots rum or brandy |
fresh ground ginger, nutmeg and cinnamon to taste(start with 1/4-1/2t each) |
1/2 cup heavy cream |
honey to sweeten, if desired |
Directions:
1. In medium saucepan, bring apple cider, cranberry juice and lime juice to a boil. 2. Reduce heat and simmer about 5-7 minutes to slightly thicken. 3. Add vanilla or rum, ginger, nutmeg and cinnamon and stir. 4. Remove from heat. Taste and add honey 1t at at time, til desired sweetness.(we don't use any :) 5. Pour into serving glasses/mugs, holding about 1-2 cups each and slowly drizzle in 1-2T heavy cream. Stir or let rest as it falls, whichever you prefer. 6. Garnish with whole cranberries and/or lime slices. |
