Warm Compote Of Pears And Cranberries |

This recipes comes from an estate sale that I obtained in 1988 when I purchased the family collection. I have not made this, but it sounds really good. I love everything in it. Ingredients:
1/2 cup apple cider |
1/3 cup granulated sugar |
1 cup fresh cranberries |
1 tablespoon fresh lemon juice |
4 large ripe pears peeled cored and cut into 8 equal slices |
1/4 cup raisins |
Directions:
1. In medium saucepan bring cider, sugar and cranberries to a boil over medium heat. 2. Cover and cook 3 minutes. 3. Add lemon juice, pears and raisins then and mix gently with a rubber spatula. 4. Reduce heat then cover and simmer 5 minutes stirring once or twice. 5. Remove cover and simmer another 6 minutes stirring occasionally until pears are just tender. 6. Transfer compote to a bowl and serve. |
