Warm Chorizo and Thyme Lentils |

A Donna Hay recipe Ingredients:
2 tablespoons olive oil |
1 onion, roughly chopped |
2 chorizo sausages, sliced |
4 sticks celery, roughly chopped |
3 garlic cloves, sliced |
6 sprigs thyme |
400 g green lentils, rinsed |
750 ml chicken stock |
salt and pepper |
2 tablespoons red wine vinegar |
Directions:
1. Heat oil in deep frypan. 2. Add onion and chorizo, cook about 8 minutes till browned. 3. Add celery, garlic and thyme, cook further 5 minutes. 4. Add lentils, stock, salt and pepper, cook 25 minutes till lentils are tender. 5. Remove from the heat, stir through vinegar. |
