Warm Chorizo and Thyme Lentils

Ingredients:
2 tablespoons olive oil
1 onion, roughly chopped
2 chorizo sausages, sliced
4 sticks celery, roughly chopped
3 garlic cloves, sliced
6 sprigs thyme
400 g green lentils, rinsed
750 ml chicken stock
salt and pepper
2 tablespoons red wine vinegar
Directions:
1. Heat oil in deep frypan.
2. Add onion and chorizo, cook about 8 minutes till browned.
3. Add celery, garlic and thyme, cook further 5 minutes.
4. Add lentils, stock, salt and pepper, cook 25 minutes till lentils are tender.
5. Remove from the heat, stir through vinegar.
