A LIGHT SUPPER FULL FLAVOURED CHICKEN SALAD. I LIKE TO AD A CHILLI OR 2 TO THE SALAD AND SOMETIMES I OMIT THE CHICKEN AND REPLACE IT WITH BEANS, ETC Ingredients:
5 slices of ciabatta |
olive oil |
salt |
ground pepper |
cooked or smoked chicken breast, cut into strips |
1 packet cos lettuce ( i prefere rocket or mixed lettuce) |
1-2 avocados, peeled and sliced |
1 packet assorted tomatoes, or quarter englis/salad tomatoes |
dressing |
10 ml dijon mustard |
30 ml red wine vinegar (no substitute!!!!!!!!) |
1 clove garlic, crushed |
60 ml olive oil |
3 ml sugar |
salt |
ground pepper |
Directions:
1. MIX ALL THE DRESSING AND WHISK UNTIL BLEND 2. MIX THE SALAD INGREDIENTS, TOSS AND POUR THE DRESSING OSERVE WITH A GLASS OF WHITE WINE 3. ENJOY :) |
