Tired of the same old tomatoes on bruschetta? Try this recipe. Loads of flavor and easy to prepare! Ingredients:

french bread- sliced thick |
2 cloves garlic |
extra virgin olive oil |
spread |
4 tablespoons extra virgin olive oil |
1/2 small onion, finely chopped |
1 tablespoon fresh sage |
1 teaspoon grated lemon peel |
1 14 oz can butter beans (can substitute canned lima or fava beans) |
6 tablespoons of juice from can of butter beans |
1 teaspoon lemon juice |
pinch cayenne pepper |
Directions:
1. Bruschetta 2. Toast bread on both sides under a broiler. 3. While still hot rub both sides of bread all over with garlic. 4. Drizzle with small amount of olive oil. 5. Spread 6. Heat oil in a skillet and fry the onion, garlic, sage, and lemon peel for 5 minutes until soft but not golden. 7. Add the beans, with about 6 tablespoons of their liquid, the lemon juice, and cayenne. 8. Cover and simmer gently for 5 minutes. 9. Mash the beans with a potato masher to form a rough paste. 10. Season to taste. 11. Spread on warm bruschetta and serve immediately. |
